No-Bake Chocolate Peanut Butter Cookie Stacks

  1. Spread the peanut butter evenly on 24 crackers. 
  2. Sandwich with remaining crackers.
  3. Transfer the cookies on a baking sheet lined with parchment paper.
  4. Refrigerate for 30 minutes. 
  5. Add the chocolate chips in a microwave safe bowl. 
  6. Microwave on high in 30 seconds intervals stirring between each interval, until the chocolate has melted. 
  7. Remove the cookies form the refrigerator. 
  8. Dip each cookie into melted chocolate. 
  9. Sprinkle with holiday sprinkles. 
  10. Refrigerate for minimum one hour before serving.
