Easy 5-Ingredient Make Ahead Mashed Potatoes

Ingredients

2 ½ pounds Yukon Gold or Russet potatoes, scrubbed and thoroughly washed

1 cup half-and-half

4 tbsp unsalted butter

2 tbsp cream cheese (optional)

salt to taste

chives, for serving

Instructions

  1. Place the potatoes in a large pot and cover with a water.
  2. Cover with a lid and bring to a boil over medium high heat.
  3. Uncover, reduce the heat and simmer for 35-45 minutes or until soft (a sharp knife should easily go through the potato).
  4. Remove from the heat and drain.
  5. Allow to cool slightly then peel the potatoes.
  6. Place the potato flash into the bowl of a stand mixer fitted with the paddle attachment.
  7. Mix on low speed until smooth and no lumps remain.
  8. In a small saucepan place the butter and half and half and bring to a simmer over medium heat.
  9. Stir the butter mixture into the mashed potatoes with a wooden spoon.
  10. Season to taste with salt.
  11. Transfer the mashed potatoes to a large microwave-safe bowl and cover tightly with plastic wrap.
  12. Refrigerate for up to 2 days.
  13. When ready to eat, poke a few holes in the plastic wrap and microwave on medium high power until potatoes are hot, stirring halfway through the reheating time, about 12-14 minutes.
  14. Transfer into a serving dish, sprinkle with chives and serve.
