How to Make the Best Homemade Lemon Mug Cake

2 tbsp unsalted butter, melted
grated zest of ¼ lemon
2 tbsp granulated sugar
¼ cup ground almonds or almond flour
2 tbsp all-purpose flour
¼ tsp baking powder
whipped cream, to serve (optional)
lemon curd, to serve (optional)
- In a 12 oz microwave-safe mug place the butter, egg, sugar and lemon zest and whisk to combine.
- Add the ground almonds, flour and baking powder and whisk until smooth.
- Microwave on high for 60-90 seconds or until just firm to touch and toothpick inserted into the center comes out clean.
- Serve with whipped cream and lemon curd (if using).
