I absolutely love anything baked that is made with lemons. And I really do mean love. Lemon meringue pies, lemon muffins, lemon poppy bread, and lately, lemon mug cakes. A handful of ingredients and a few minutes of your time are all it takes to make a lemon-based dessert. And best of all? It’s made entirely from scratch with mostly whole food ingredients that all work in tandem to make a truly great lemon cake indeed. When you try this one out, be sure to add some whipped cream and lemon curd to the mug cake when you serve it. Thank me later.

Ingredients

2 tbsp unsalted butter, melted

1 egg

grated zest of ¼ lemon

2 tbsp granulated sugar

¼ cup ground almonds or almond flour

2 tbsp all-purpose flour

¼ tsp baking powder

whipped cream, to serve (optional)

lemon curd, to serve (optional)

Instructions

  1. In a 12 oz microwave-safe mug place the butter,  egg, sugar and lemon zest and whisk to combine.
  2. Add the ground almonds, flour and baking powder and whisk until smooth.
  3. Microwave on high for 60-90 seconds or until just firm to touch and toothpick inserted into the center comes out clean.
  4. Serve with whipped cream and lemon curd (if using).

  1. This was delicious.
    I’m not a sugar fiend so I only put 1tbsp sugar and added in 1/4 lemon juice per mug and it was so lovely. I cooked mine for 1min and it was light and creamy. Will definitely make this again
