For the meatballs
- 4 oz extra lean beef mince
- 1 tbsp finely chopped onion
- 1 small garlic clove, minced
- ¼ tsp Italian seasoning
- 1 tsp olive oil
- salt and black pepper to taste
The rest of ingredients
- 1 tbsp olive oil
- 1 medium zucchini, spiralized into noodles
- 1 cup cherry tomatoes, halved
- 1 garlic clove, minced
- ¼ tsp Italian seasoning (optional)
- salt and black pepper to taste
- Preheat oven to 350°F.
- Line a small baking sheet with parchment paper. Set aside.
- To make the meatballs, in a bowl place the beef, onion, garlic, Italian seasoning and salt and black pepper to taste.
- Mix to combine.
- Form the meat mixture into 1 inch round balls.
- Place the balls on the prepared baking sheet.
- Brush the meatballs with 1 teaspoon of olive oil.
- Bake in preheated oven for 8-10 minutes or until cooked.
- Meanwhile, in a nonstick skillet heat 1 tablespoon of olive oil over medium heat.
- Add the cherry tomatoes and cook stirring occasionally, until tomatoes release their juices, 6–8 minutes.
- Add the garlic and cook for 30 seconds.
- Add the zucchini noodles and Italian seasoning (if using) and cook for 3-5 minutes or until al dente.
- Remove from the heat, season with salt and black pepper to taste.
- Add the meatballs and toss to combine.
