For the meatballs

  1. Preheat oven to 350°F.
  2. Line a small baking sheet with parchment paper. Set aside.
  3. To make the meatballs, in a bowl place the beef, onion, garlic, Italian seasoning and salt and black pepper to taste.
  4. Mix to combine.
  5. Form the meat mixture into 1 inch round balls.
  6. Place the balls on the prepared baking sheet.
  7. Brush the meatballs with 1 teaspoon of olive oil.
  8. Bake in preheated oven for 8-10 minutes or until cooked.
  9. Meanwhile, in a nonstick skillet heat 1 tablespoon of olive oil over medium heat.
  10. Add the cherry tomatoes and cook stirring occasionally, until tomatoes release their juices, 6–8 minutes.
  11. Add the garlic and cook for 30 seconds.
  12. Add the zucchini noodles and Italian seasoning (if using) and cook for 3-5 minutes or until al dente.
  13. Remove from the heat, season with salt and black pepper to taste.
  14. Add the meatballs and toss to combine.
