Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • ½ cup drained oil-packed sun-dried tomatoes, chopped
  • 4 tbsp chopped fresh parsley
  • 8 large eggs
  • 1 cup half and half
  • 1 cup heavy cream
  • 2 cups grated mozzarella cheese
  • salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Place the sausage in a nonstick skillet.
  3. Cook over medium heat, breaking it up into small pieces with a wooden spoon, until browned and no longer pink.
  4. Add the onion and garlic and cook for 2-3 minutes.
  5. Remove the skillet from the heat.
  6. In a large bowl place the eggs, heavy cream, half and half and mix to combine.
  7. Season to taste with salt and black pepper.
  8. Add the shredded mozzarella cheese, sun dried tomatoes, parsley, cooked sausage and mix to combine.
  9. Pour the mixture into a large baking dish.
  10. Bake in preheated oven for 35 -50 minutes or until a knife inserted in the middle comes out clean.
