The Best Homemade Instant Pot Wonton Soup

I wish I had known sooner how easy it is to make a good bowl of homemade instant pot wonton soup. I don’t cook Asian-inspired dishes too often because I don’t always stock the ingredients in my pantry, but these homemade wontons and the soup base itself are pretty basic. The wontons are made with ground pork, cornstarch, some choice spices, and a few other tasty ingredients. Meanwhile, the soup base is made with your choice of chicken or beef stock, ginger, garlic, soy sauce, sesame oil, and green onions. No need for excess sodium and flavorings when you have all these wholesome ingredients that pack a lot of flavor already.

Ingredients

For the wontons:

  • ½ pound ground pork
  • 1 tsp cornstarch
  • 1 tsp grated ginger
  • 1 garlic clove, minced
  • ½ tsp crushed red pepper flakes
  • 1 spring onion, minced
  • 1 tsp rice wine vinegar
  • 1 tbsp soy sauce
  • ½ tsp sesame oil
  • 40 wonton wrappers, thawed if frozen

For the soup:

  • 4 cups chicken or beef stock
  • 2 inch piece of peeled ginger
  • 1 tbsp soy sauce
  • 2 garlic cloves
  • ½ tsp sesame oil
  • 2 tbsp sliced green onions, for garnish
  • salt to taste

Instructions

  1. To make the filling, in a bowl place the ground pork, soy sauce, spring onion, grated ginger, chives, white pepper and salt to taste.
  2. Mix to combine.
  3. To make the wonton, place a teaspoon of the filling in the center of the wrapper.
  4. Moisten the edges of the wrapper with water.
  5. Fold the wrapper in half to create a rectangular shape.
  6. Fold the sides inward so that they overlap.
  7. Repeat with remaining filling and wonton wrappers.
  8. To make the soup, press the SAUTE button on the Instant pot.
  9. Add the stock and bring it to a boil.
  10. Add the ginger, garlic, soy sauce and sesame oil and cook for 3-4 minute.
  11. Discard the ginger and garlic.
  12. Add the wontons and cook for 10 minutes or until cooked.
  13. Press the CANCEL button.
  14. Season to taste with salt.
  15. Serve warm and garnish with green onions.
