I’m one of those people who can have turkey any time of the year, not just during Thanksgiving. I love how it’s super lean with barely any fat at all, so it leaves so much room for creativity (read: butter-based sauces). I even love the leftovers because there’s so much you could do with it. My favorite way to have turkey leftovers is some good old instant pot turkey soup. I love using dark meat for soup because it makes it extra tasty, but even the white meat works just fine for this. I highly recommend this recipe if you really want to make the most out of your turkey.
