Every once in a while I switch up my eating habits but I always try to eat more whole foods. The paleo diet is always a safe choice for me because it’s so easy to follow and I have so many paleo recipes that have become my favorites over the years. This instant pot sweet potato soup is one of them. While sweet potatoes are admittedly a bit on the high end when it comes to carbs, their other benefits more than make up for that. They’re a great source of essential B-vitamins and dietary fiber, which helps to make this soup recipe even more satisfying.

Ingredients

  • 1 tbsp olive oil
  • 2 thin bacon slices, chopped
  • 1 medium red onion, chopped
  • 2 garlic cloves, minced
  • 1/8 tsp cayenne pepper or more to taste
  • 3 medium sweet potatoes, peeled and diced
  • 4 cup chicken broth or stock
  • juice of 1 lime
  • salt, freshly ground black pepper, to taste

For garnish:

  • 2 cooked bacon slices, crumbled

Instructions

  1. Press the SAUTE button on the Instant pot and let stand until screen reads “HOT”.
  2. Add the olive oil.
  3. Add the onion and bacon and cook, stirring occasionally for 2-3 minutes.
  4. Add the garlic and cook for 30 seconds.
  5. Press the CANCEL button.
  6. Add the sweet potatoes, cayenne pepper and chicken broth.
  7. Stir to combine.
  8. Close and seal the Instant pot.
  9. Turn the venting knob to SEALING.
  10. Press PRESSURE COOK button and check to make sure the pressure level shows as “High” in the display.
  11. Adjust the timer to 5 minutes.
  12. When finished cooking, quick-release pressure according to manufacturer’s directions.
  13. Open the lid.
  14. Stir in the lime juice.
  15. Using an immersion blender, purée the soup.
  16. Season to taste with salt and black pepper.
  17. Serve warm garnished with crumbled bacon.
