For the roast:

For making the sandwiches (optional):


  1. Season the roast with salt and black pepper to taste.
  2. Press the SAUTE button on the Instant Pot and let stand until screen reads “HOT”.
  3. Add the oil.
  4. Add the roast chunks and brown 4-5 minutes per side.
  5. Remove the roast from the Instant Pot.
  6. Add the dark beer and scrape the bottom of the pot with a wooden spoon to loosen the brown bits.
  7. Press the CANCEL button.
  8. Add the roast, onion, garlic powder, bay leaf and soy sauce to the pot and stir to combine.
  9. Add the Worcestershire sauce and dried thyme if using.
  10. Close and seal the Instant pot.
  11. Turn the venting knob to SEALING.
  12. Press the PRESSURE COOK button and check to make sure the pressure level shows as “High” on the display.
  13. Adjust the timer to 45 minutes.
  14. When finished cooking, release pressure naturally according to manufacturer’s directions.
  15. Open the lid.
  16. Remove the roast from the Instant pot.
  17. Shred the roast with 2 forks.
  18. Strain the cooking liquid.
  19. To make the sandwiches,  preheat the broiler of your oven.
  20. Brush the roll halves with garlic butter and broil until golden.
  21. Remove the roll top halves from the baking sheet.
  22. Leave the bottom halves on the baking sheet.
  23. Top with shredded beef and cheese slices.
  24. Return to the oven and broil until the cheese is melted.
  25. Remove from the oven.
  26. Spread the horseradish mayonnaise on the roll top halves.
  27. Close the sandwich and serve with cooking liquid to dunk the sandwich in.
