Soul-Satisfying Instant Pot Creole Red Beans And Rice

- 1 tbsp olive oil
- 1 medium onion, chopped
- 3 celery stalks, chopped
- 1 medium green bell pepper, chopped
- 1 medium red bell pepper, chopped
- 1 pound andouille sausage, cut into thick slices
- 3 garlic cloves, minced
- 1 pound dried red kidney beans, sorted of debris and rinsed
- 1 tbsp Creole seasoning
- ½ tsp cayenne peeper (more or less to taste)
- 4 cups chicken broth
- 2 cups water
- 2 bay leaves
- salt, black pepper to taste
- 2 spring onions, sliced (for garnish)
For the rice:
- 2 cups long grain white rice
- 2 ½ cup water
- pinch of salt
- Press the SAUTE button on the Instant Pot and let stand until screen reads “HOT”.
- Add the olive oil.
- Add the onion, celery, bell peppers and sausage and cook, stirring occasionally, 2 to 3 minutes.
- Add the garlic and cook for 30 seconds.
- Press the CANCEL button.
- Add the Creole seasoning, cayenne pepper, bay leaves, red kidney beans, chicken broth and 2 cups water.
- Stir to combine.
- Close and seal the Instant pot.
- Turn the venting knob to SEALING.
- Press the PRESSURE COOK button and check to make sure the pressure level shows as “High” on the display.
- Adjust the timer to 45 minutes.
- When finished cooking, release pressure naturally according to manufacturer’s directions.
- Open the lid.
- Taste and add more salt and black pepper, if necessary.
- Remove the bean mixture from the Instant pot and set aside.
- Wash and dry the Instant pot insert.
- Return the pot insert into the Instant Pot.
- To cook the rice, rinse the rice well under cold running water.
- Add the rice and 2 ½ cup of water to the Instant pot.
- Season with salt.
- Close and seal the Instant pot.
- Turn the venting knob to SEALING.
- Press the PRESSURE COOK button and check to make sure the pressure level shows as “High” on the display.
- Adjust the timer to 3 minute.
- When finished cooking, let the pressure come down naturally for 10 minutes, then quick release the rest of the pressure.
- Open the lid.
- Fluff up the with a fork.
- Serve the beans over the rice topped with chopped green onions.
