It’s all pressure cooked to perfection in the instant pot, and what a meal it becomes in just a few short minutes. To go along with the red beans, you’ll be adding a spicy mix of ingredients that includes both red and green bell peppers, andouille sausage, Creole seasoning, and cayenne pepper. Soul-Satisfying Instant Pot Creole Red Beans And Rice

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 3 celery stalks, chopped
  • 1 medium green bell pepper, chopped
  • 1 medium red bell pepper, chopped
  • 1 pound andouille sausage, cut into thick slices
  • 3 garlic cloves, minced
  • 1 pound dried red kidney beans, sorted of debris and rinsed
  • 1 tbsp Creole seasoning
  • ½ tsp cayenne peeper (more or less to taste)
  • 4 cups chicken broth
  • 2 cups water
  • 2 bay leaves
  • salt, black pepper to taste
  • 2 spring onions, sliced (for garnish)

For the rice:

  • 2 cups long grain white rice
  • 2 ½ cup water
  • pinch of salt

Instructions

  1. Press the SAUTE button on the Instant Pot and let stand until screen reads “HOT”.
  2. Add the olive oil.
  3. Add the onion, celery, bell peppers and sausage and cook, stirring occasionally, 2 to 3 minutes.
  4. Add the garlic and cook for 30 seconds.
  5. Press the CANCEL button.
  6. Add the Creole seasoning, cayenne pepper, bay leaves, red kidney beans, chicken broth and 2 cups water.
  7. Stir to combine.
  8. Close and seal the Instant pot.
  9. Turn the venting knob to SEALING.
  10. Press the PRESSURE COOK button and check to make sure the pressure level shows as “High” on the display.
  11. Adjust the timer to 45 minutes.
  12. When finished cooking, release pressure naturally according to manufacturer’s directions.
  13. Open the lid.
  14. Taste and add more salt and black pepper, if necessary.
  15. Remove the bean mixture from the Instant pot and set aside.
  16. Wash and dry the Instant pot insert.
  17. Return the pot insert into the Instant Pot.
  18. To cook the rice, rinse the rice well under cold running water.
  19. Add the rice and 2 ½ cup of water to the Instant pot.
  20. Season with salt.
  21. Close and seal the Instant pot.
  22. Turn the venting knob to SEALING.
  23. Press the PRESSURE COOK button and check to make sure the pressure level shows as “High” on the display.
  24. Adjust the timer to 3 minute.
  25. When finished cooking, let the pressure come down naturally for 10 minutes, then quick release the rest of the pressure.
  26. Open the lid.
  27. Fluff up the with a fork.
  28. Serve the beans over the rice topped with chopped green onions.
