Tonkatsu Instant Pot Ramen

Authentic Tonkatsu Instant Pot Ramen

Ingredients

For the broth:

2 pounds pork bones

68 spring onions

3 garlic cloves, crushed

1 small onion

4 slices fresh ginger

For the chashu pork:

1 pound pork belly, skin on

½ cup soy sauce

4 slices fresh ginger

1 cup water

½ cup cooking sake

½ cup mirin

4 garlic, crushed

1 leek, washed well and chopped

3 tbsp oil

The rest of ingredients:

4 soft-boiled egg

2 sliced spring onions

1 pound fresh ramen noodles

4 cooked shiitake mushrooms, sliced (optional)

nori sheet cut into 4 strips

Instructions

  1. To make the broth, add the pork bones to the Instant pot.
  2. Close and seal the Instant pot.
  3. Turn the venting knob to SEALING.
  4. Press PRESSURE COOK button and check to make sure the pressure level shows as “High” on the display.
  5. Adjust the timer to 1 minute.
  6. When finished cooking, quick release pressure according to manufacturer’s directions.
  7. Open the lid.
  8. Drain the bones and rinse under cold water.
  9. Scrub any scum off the bones, then put them back in the Instant pot.
  10. Add the spring onions, garlic, ginger and 8 cups of water.
  11. Close and seal the Instant pot.
  12. Turn the venting knob to SEALING.
  13. Press PRESSURE COOK button and check to make sure the pressure level shows as “High” on the display.
  14. Adjust the timer to 3 hours.
  15. When finished cooking, release pressure naturally according to manufacturer’s directions.
  16. Open the lid.
  17. Strain the broth using a fine strainer.
  18. Season with salt to taste.
  19. Refrigerate (or freeze) the broth until ready to use.
  20. To make the Chashu Pork, roll the pork belly into a log and tie with butcher twine.
  21. In the Instant pot place the rolled pork belly, soy sauce, sake, mirin, leek, ginger slices, garlic and water.
  22. Close and seal the Instant pot.
  23. Turn the venting knob to SEALING.
  24. Press PRESSURE COOK button and check to make sure the pressure level shows as “High” on the display.
  25. Adjust the timer to 90 minutes.
  26. When finished cooking, quick release pressure according to manufacturer’s directions.
  27. Open the lid.
  28. Remove the pork belly from the pot.
  29. Wash and dry the Instant pot insert.
  30. Return the pot insert into the Instant Pot.
  31. Press the SAUTE button on the Instant Pot and let stand until screen reads “HOT”.
  32. Add the oil.
  33. Add the pork and sear all sides until it’s golden brown.
  34. Remove the pork from the pot and allow to cool completely before slicing.( For the best results refrigerate the pork overnight.)
  35. To assemble the ramen, cook the noodles according to the package instructions and divide among bowls.
  36. In a large saucepan, bring the tonkotsu broth to a simmer.
  37. Ladle the broth into the bowls.
  38. Top each bowl with 2 slices of Chashu Pork, egg halves, sliced shiitake mushroom, pieces of nori and sliced spring onion.
