Easy Instant Pot Shredded Chicken for Family Taco Night
Every week my family and I make it a point to have at least one designated night for a themed dinner night. We try to do a different theme every time, but there’s one that we keep coming back to again and again — taco night! That’s mostly because we always make incredible recipes like this one. This recipe uses a savory mix of herbs and spices, along with a few other choice ingredients to make a deliciously spicy shredded chicken to use in your tacos. This Instant Pot Shredded Chicken Seriously Makes the Best Tacos Ever
In order to make this shredded chicken, you’ll need to use an Instant Pot and set it to ‘SAUTE’. Once the screen is reading ‘HOT’, you can add in one tablespoon of olive oil. I always make sure to use extra virgin olive oil for all of my cooking needs because it’s a great source of heart healthy monounsaturated fats that has been proven to significantly lower your heart disease risk. If you’ve still been cooking with vegetable oils, then you should be considering making the switch over to olive oil as soon as possible. More and more studies are finding that most commercial brand vegetable oils can actually cause inflammation. And if left unchecked, chronic inflammation can turn into some pretty serious diseases. Add the chicken breasts into the Instant Pot and sear them for a few minutes per side. You can then add the diced onion, minced garlic, chili powder, diced tomatoes, and fresh squeezed lime juice.
Just as using vegetable oils can be incredibly detrimental to your health, cooking with both garlic and onion is a great way to give your health a huge boost. They’re both members of the Allium family of vegetables, and they’re known to provide benefits for everything from boosting your immune system to even helping prevent cancer. I like to use chili powder in this recipe as well because it gives your chicken that spicy kick that works so well when making tacos. On top of being perfect for giving a spicy taste to your meals, chili powder is also great for your health. Cook everything in the Instant Pot for approximately nine minutes, and then quick-release the pressure. Remove your chicken, shred it with two forks, then add it back in and press the ‘SAUTE’ button once again.
Once the chicken has absorbed all of the liquid in the Instant Pot, you can season it with a bit of salt and pepper before serving it with your favorite toppings to make delicious and nutritious tacos.

Easy Instant Pot Shredded Chicken

Ingredients
2 pounds boneless, skinless chicken breasts (about 4 small/medium or 3 medium/large), cut in half if large
1 small yellow onion, diced
4 cloves garlic, minced
2 tsp chili powder
1 (14-ounce) can diced tomatoes in their juices
1 lime, juiced
1 tbsp olive oil
salt and black pepper
Instructions
Season the chicken with salt and black pepper to taste and set aside.
Press the SAUTE button on the Instant pot and let stand until screen reads “HOT”.
Add the olive oil.
Add the chicken in the Instant Pot and sear 2 to 3 minutes per side.
Add the onion, garlic, chili powder, diced tomato and lime juice.
Toss to coat.
Turn the venting knob to SEALING and press PRESSURE COOK button.
Adjust the timer to 9 minutes.
When finished cooking, quick-release pressure according to manufacturer’s directions.
Open the lid and remove the chicken from the pot.
Shred the chicken with 2 forks.
Add the chicken back into the Instant Pot and toss to coat.
Press the SAUTE button on the Instant pot and cook uncovered, stirring occasionally until all liquid is absorbed.
Season with salt and black pepper to taste.
Serve the chicken with your favorite tacos and toppings.
