How to Make the Best Instant Pot Broccoli Cheese Soup
One of the first vegetables that I would eat as a child was broccoli, and that’s only because my parents showed me how much better it is when paired with cheese. So naturally, I introduced it to my kids in a similar way and that is through instant pot broccoli cheese soup. The instant pot part is for my benefit—because clean-up time isn’t my favorite after a long day at work—but the broccoli/cheese combo is for them. I like how you can still taste the broccoli in the soup but the cheese makes it seem more indulgent, so it’s almost as if this soup isn’t ‘healthy’ but it absolutely is.

How to Make the Best Instant Pot Broccoli Cheese Soup

- Cook Time: 8 minutes

Ingredients
- 4 tbsp unsalted butter
- 1 medium onion, chopped
- 1 garlic clove, minced
- ¼ cup all-purpose flour
- 4 cups vegetable or chicken stock
- 1 pound broccoli florets, cut into bite-size pieces
- 2 medium carrots, peeled and diced
- ½ tsp smoked paprika or regular paprika
- 1 cup half-and-half
- 8 oz grated cheddar cheese plus extra for garnish
- salt, black pepper to taste
Instructions
- Press the SAUTE button on the Instant pot and let stand until screen reads “HOT”.
- Add the butter.
- Add the onion and cook, stirring occasionally for 2-3 minutes.
- Add the garlic and cook for 30 seconds.
- Stir in the flour and cook for 1-2 minutes or until golden brown.
- Slowly pour in the chicken stock, stirring well to combine and dissolve the flour into the liquid.
- Press the CANCEL button.
- Add the broccoli, carrots and smoked paprika.
- Stir to combine.
- Close and seal the Instant pot.
- Turn the venting knob to SEALING.
- Press PRESSURE COOK button and check to make sure the pressure level shows as “High” in the display.
- Adjust the timer to 3 minutes.
- When finished cooking, quick-release pressure according to manufacturer’s directions.
- Open the lid.
- Press the SAUTE button on the Instant pot.
- Stir in the half and half.
- Add the grated cheese and stir until just combined.
- Season to taste with salt and black pepper.
- Press the CANCEL button.
- Serve warm garnished with extra cheese.
