I’m a huge fan of baked potatoes, especially when it’s loaded with all the fix ins. So when that loaded baked potato is made into soup form, I’m all over it. This recipe for instant pot baked potato soup delivers in so many ways. It’s buttery, creamy, and have I mentioned there’s bacon in it? It really is an incredible soup recipe and an all-around comfort food especially with the melted cheese on top. It’s quite filling too, so it’s great for whenever I get home a little late from work and I just want something filling before I go to bed.
