Southern Style Brown Sugar Instant Pot Baked Beans from Scratch

- 16 ounces dried pinto beans, sorted of debris and rinsed
- 8 ½ cups water
- 1 tbsp oil
- 8 slices bacon, chopped
- 1 medium onion, finely chopped
- 3/4 cup ketchup
- 2 tbsp spicy brown mustard
- 2 tbsp Worcestershire sauce
- ¼ cup apple cider vinegar
- ½ tsp smoked paprika (optional)
- ½ cup light brown sugar
- salt to taste
- Add the dried beans, 8 cups of water and 1 teaspoon of salt to the Instant pot.
- Close and seal the Instant pot.
- Turn the venting knob to SEALING.
- Press the PRESSURE COOK button and check to make sure the pressure level shows as “High” on the display.
- Adjust the timer to 45 minutes.
- When finished cooking, release pressure naturally according to manufacturer’s directions.
- Open the lid.
- Drain the beans and set aside.
- Press the SAUTE button on the Instant Pot and let stand until screen reads “HOT”.
- Add the olive oil.
- Add the onion and bacon and cook, stirring occasionally, 2 to 3 minutes.
- Press the CANCEL button.
- Add the ketchup, mustard, Worcestershire sauce, apple cider vinegar, smoked paprika, brown sugar and ½ cup of water.
- Mix to combine.
- Add the cooked beans and stir to combine.
- Season to taste with salt.
- Close and seal the Instant pot.
- Turn the venting knob to SEALING.
- Press the PRESSURE COOK button and check to make sure the pressure level shows as “High” on the display.
- Adjust the timer to 15 minutes.
- When finished cooking, release pressure naturally according to manufacturer’s directions.
- Open the lid.
- Taste and add more salt if needed.
