Ingredients

2 pounds skinless, boneless chicken breasts

1 can (14 oz) diced tomato

1 onion, chopped

3 garlic cloves, minced

2 tsp ground cumin

2 tsp dried oregano

2 tsp paprika

1 tsp salt

1 tsp cayenne pepper

½ tsp black pepper or to taste

1 lime, juiced

Instructions

  1. In a small bowl combine the cumin, oregano, paprika, cayenne pepper, salt and black pepper.
  2. Place the chicken in a slow cooker.
  3. Sprinkle the dry rub evenly over both sides of the chicken.
  4. Add the diced tomato, garlic, onion and lime juice and mix to combine.
  5. Cover with a lid and cook on low for 4-5 hours or until the chicken is cooked through.
  6. Remove the chicken and shred it into bite-size pieces with two forks.
  7. Return the chicken to the slow cooker and stir.
  8. Serve with warm tortillas and your favorite toppings (salsa, sour cream, grated cheese…)
