Chocolate Chip Muffins the Whole Family Will Love (Try these!)

3 medium ripe bananas

1 large egg

1/4 cup honey

1 tbsp pure vanilla extract

3 tbsp melted coconut oil

½ cup nonfat plain Greek yogurt

1 tbsp milk

1 ½ cups whole wheat flour

1 tsp baking soda

pinch of salt

½ cup dark chocolate chips plus extra for sprinkling on top (optional)


  1. Preheat oven to 350ºF.
  2. Line a 12-cup muffin pan with paper cups. Set aside.
  3. In the food processor place the bananas and egg and process until smooth.
  4. Add the melted coconut oil, milk, Greek yogurt, vanilla extract and honey and process to combine.
  5. Add in the whole wheat flour, salt and baking soda and process until well combined.
  6. Fold in the chocolate chips.
  7. Scoop the batter into the prepared muffin cups.
  8. Sprinkle with extra chocolate chips if using.
  9. Bake in preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  10. Remove from the oven and allow to cool completely before serving.
