Quick and Easy Carrot Cake Mug Cake

¼ cup grated carrot

2 tbsp butter, melted

2 tbsp brown sugar

1 egg

finely grated zest of ¼ lemon

2 tbsp all-purpose flour

¼ tsp baking powder

pinch of ground cinnamon

1 tbsp golden raisins

1 tbsp chopped walnuts

whipped cream, to serve (optional)


  1. In a oversized microwave-safe mug place the grated carrot, butter and brown sugar.
  2. Mix to combine.
  3. Cover with plastic wrap and microwave on high for 90 seconds.
  4. Remove from the microwave oven and add the lemon zest.
  5. Mix to combine.
  6. Add the egg and whisk to combine.
  7. Add the flour, baking powder, ground cinnamon and whisk until smooth.
  8. Fold in chopped walnuts and raisins.
  9. Microwave on high for 60-90 seconds or until risen and just firm to touch.
  10. Top with whipped cream and dust with a little ground cinnamon and serve.
