How to Make Chocolate Cake in a Mug

Ever go to the grocery store and walk through the bakery with all those beautiful, rich cakes, and start craving a piece of chocolate cake. Not an entire cake, but just ONE piece?

Well here is a recipe that will make a large batch mix of chocolate cake that you can store and later make single serving sizes, or gift a few to a friend in a mug.

Here is the recipe for the large stock batch recipe:

Chocolate Cake Mix

2 cups all-purpose flour 

1 3/4 cups sugar 

1 1/2 cup cocoa
2 teaspoons baking powder
1 teaspoon baking soda 

1 teaspoon salt
1/4 cup vegetable shortening
¼ cup cornstarch
1 cup powder sugar

Directions

Mix all the dry ingredients along with the shortening in a food processor to blend the ingredients and to cut the shortening into the mixture. It’s that easy! Find a large jar to store the remainder of the mix and store in a cool, dry place.

To make a single serving of cake, take a mug and spray the inside with oil. Then place ½ cup of the dry mixture into the mug. Add 1 TB of water, 1 TB of oil, and 1 egg white into the mug and mix well. Place in microwave for 1 minute. You can top your cake with fresh strawberries or chocolate syrup, or make a Chocolate glaze mixture.

For the chocolate glaze mixture take 1/3 cup of powder sugar and 2 TSP of choco powder and 1 ½ TSP of water. Place all in a plastic bag and with your fingers mix the ingredients together. You can substitute the coco powder with another dry flavoring or even vanilla extract.

Glaze Mixture

1/3 Powder sugar
1 ½ TSP water
2 TSP of coco powder ( or other flavoring)

Cake in the mug recipe

½ cup dry mix
1TB water
1 TB oil
1 Egg white

Directions

If you want to create a gift for a friend, take some small plastic bags an place ½ cup of the mixture, and they dry ingredients for the glaze and tie the top with a ribbon. Place it in a mug with the directions for Cake in a mug recipe. And your small single serving cake is ready to give away!

There are other recipes for cake in a mug, but they require one box of cake mix and one box of angel food cake/ or pudding mix. If you’re like me, I wanted everything to be homemade without all the additives. If you’re in a crunch for time and have both of the mixes available you can totally use that as your large batch cake mix. The large chocolate cake batch recipe is a mix of homemade chocolate cake and homemade chocolate pudding. It was great because I had all those ingredients already in my home and I didn’t have to run down to the grocery store to mix everything up.
