Healthy Breakfast Casserole for a Balanced Family Breakfast

Instructions

  1. Preheat oven to 375°F.
  2. Position a rack in the middle of the oven.
  3. Place the potato in a microwave safe dish.
  4. Add 2 tablespoons of water.
  5. Cover with a microwave safe plastic wrap, leaving a small corner uncovered for venting.
  6. Microwave on high for 6-7 minutes.
  7. Remove from the microwave oven.
  8. Drain the potatoes in a colander and set aside.
  9. Place the sausage in a nonstick skillet.
  10. Cook over medium heat, breaking it up into small pieces with a wooden spoon, until browned and no longer pink.
  11. Add the onion and green pepper and cook for 2-3 minutes.
  12. Remove from the heat.
  13. Add the potatoes.
  14. Season with salt and black pepper to taste.
  15. Toss to combine.
  16. Transfer the mixture into a large baking dish. Set aside.
  17. In a large bowl place the eggs, sour cream, milk and mustard.
  18. Season to taste with salt and black pepper.
  19. Mix to combine.
  20. Stir in the shredded Cheddar cheese.
  21. Pour the egg mixture over the sausage mixture.
  22. Bake in preheated oven for 45 -50 minutes or until a knife inserted in the middle comes out clean.
