Healthy Breakfast Casserole for a Balanced Family Breakfast

- 1 pound Italian sausage, casings removed
- 1 medium onion, diced
- 1 medium green bell pepper, cored, seeded, and diced
- 1 ¼ pound potatoes, peeled and cut into ½ inch dice
- 10 large eggs
- 1 cup sour cream
- 1 cup milk
- 2 tbsp yellow mustard
- 1 ½ cups shredded Cheddar cheese
- salt and black pepper to taste
- Preheat oven to 375°F.
- Position a rack in the middle of the oven.
- Place the potato in a microwave safe dish.
- Add 2 tablespoons of water.
- Cover with a microwave safe plastic wrap, leaving a small corner uncovered for venting.
- Microwave on high for 6-7 minutes.
- Remove from the microwave oven.
- Drain the potatoes in a colander and set aside.
- Place the sausage in a nonstick skillet.
- Cook over medium heat, breaking it up into small pieces with a wooden spoon, until browned and no longer pink.
- Add the onion and green pepper and cook for 2-3 minutes.
- Remove from the heat.
- Add the potatoes.
- Season with salt and black pepper to taste.
- Toss to combine.
- Transfer the mixture into a large baking dish. Set aside.
- In a large bowl place the eggs, sour cream, milk and mustard.
- Season to taste with salt and black pepper.
- Mix to combine.
- Stir in the shredded Cheddar cheese.
- Pour the egg mixture over the sausage mixture.
- Bake in preheated oven for 45 -50 minutes or until a knife inserted in the middle comes out clean.
