2-Minute Banana Mug Cake (Yum!)
Is there anything better thick slice of banana bread? I used to think the answer to that question was “no”. And then I found a recipe for making a quick and easy banana mug cake that you can have ready to go in less than three minutes. All of a sudden, I could enjoy everything I love about banana bread in a fraction of the time. This recipe makes a particularly good banana mug cake at that, as it also includes a few tasty extras like your choice of chopped walnuts or pecans and ground cinnamon. 2-Minute Banana Mug Cake (Yum!)

Ingredients
2 tbsp butter, melted
½ medium banana, mashed
1 egg
2 tbsp brown sugar
¼ tsp vanilla extract (optional)
3 tablespoons all-purpose flour
¼ tsp baking powder
pinch of ground cinnamon (optional)
1 tbsp chopped walnuts or pecans
Instructions
- In a 12 fl oz microwave-safe mug place the butter, mashed banana, egg, brown sugar and vanilla extract (if using) and mix to combine.
- Add the all purpose flour, baking powder and pinch of ground cinnamon (if using) and mix until well combined.
- Fold in chopped walnuts.
- Microwave on high for 60-90 seconds or until just firm to touch and toothpick inserted into the center comes out clean.
