Healthy Apricot Energy Ball Mix in a Jar (Try these!)
If you’ve been on a themed recipe kick as of late, so that’s one of the reasons for all of my recent “in a jar” style recipes. I’ve just been totally obsessed with them this year! Not only do the decorated jars just look super cool, my friends and family all love them so I already know what to get them for special occasions. This time, I’ll be making apricot energy balls that are perfect little calorie bites when cravings hit.
You’ll be using a handful of wholesome ingredients like almond flour, flax meal, almonds, chia seeds, finely shredded coconut, and of course, a dried apricot. When you put them all together, you end up with one ridiculously yummy energy ball mix that is even paleo-friendly as well!
Healthy Apricot Energy Ball Mix in a Jar (Try these!)

Ingredients
one 2 cups jar
5 tsp almond flour
1 ½ tsp flax meal
¾ cup almonds
1 tbsp chia seeds
½ cup unsweetened finely shredded coconut
¾ cup whole dried apricot
Instructions
In a small bowl combine the almond flour and flax meal.
Layer the ingredients in the following order in a jar:
-almond flour mixture
– unsweetened finely shredded coconut
-chia seeds
– almonds
-dried apricot
Print the recipe tag on card stock and cut out.
Attach the tag to the jar.
Decorate the jar as you wish.
To make the energy balls, in a food processor add the energy ball mix and process to combine.
Slowly add water, 1 teaspoon at a time until you get a dough you can shape with your hands.
Roll into balls about 1 tablespoon in size.
Keep the balls in an airtight container in the refrigerator until ready to serve.
