Almond Flour Paleo Blueberry Muffins for Kids




  1. Preheat oven 350°F.
  2. Wash the blueberries and gently pat dry with kitchen towel. Set aside.
  3. Line 9 muffin cups with paper liners or silicone cupcake liners.
  4. In a bowl combine the almond flour, salt, nutmeg and baking soda. Set aside.
  5. In the bowl of a stand mixer fitted with the whisk attachment beat the eggs and honey until pale and fluffy, about 3-5 minutes.
  6. Add the melted coconut oil and vanilla extract and beat until well combined.
  7. Add in the almond flour mixture and mix until smooth.
  8. Gently fold in the blueberries.
  9. Scoop the batter into the prepared muffin cups.
  10. Bake in preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  11. Remove from the oven and allow to cool completely before serving.
